Recipe of Soft tofu Curry Vegetables Coconut Sauce

Ingredients:
- Vegetable Oil 15 ml
- Onion, Sliced 60 gr
- Red or Green Bell Pepper, diced
- Ready curry paste 30 gr
- Water 80 ml
- Coconut Milk 80 ml
- Tomato, diced 100 gr
- Table salt to taste
- Spinach 100 gr
- Jongga soft tofu, diced
- Cliantro to garnish
Direction:
- In a large pan heat the oil and start to cook onion and bell pepper. cook until the onion begin to brown, about 4 minutes.
- Add the curry paste and stir for 2 minutes. Reduce the heat to low and pour in water, coconut milk and diced tomato.
- Bring to simmer and season with salt if need. Add Spinach and tofu and gently stir to coat with the sauce.
- Cook for 5 minutes and garnish with cilantro before serving.
